Ingredients
  

  • 2 plant-based chicken breasts about 200g
  • 1 tbsp olive oil
  • 1 tbsp garlic minced
  • 2 tbsp parsley chopped
  • 1 tbsp rosemary chopped
  • 1 tbsp thyme chopped
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Method
 

  1. Prepare herb mix.
  2. Combine parsley, rosemary, thyme, oregano, garlic, lemon zest, salt, and pepper.
  3. Coat the vegan chicken.
  4. Press the herb mixture firmly onto the plant-based chicken breasts.
  5. Heat the pan.
  6. Add olive oil on medium heat.
  7. Cook.
  8. Pan-sear vegan chicken for 4–5 minutes per side until crisp and golden.
  9. Add brightness.
  10. Splash lemon juice on top.
  11. Finish.
  12. Garnish with extra herbs before serving.
