Ingredients
  

  • Firm tofu – 250 g crumbled
  • Black beans cooked – 1½ cups
  • Kidney beans cooked – 1 cup
  • Olive oil – 1½ tablespoons
  • Onion – 1 medium chopped
  • Garlic – 4 cloves minced
  • Chipotle chili in adobo minced – 1 tablespoon
  • Tomato puree – 1½ cups
  • Vegetable broth – 1 cup
  • Chili powder – 1 teaspoon
  • Smoked paprika – 1 teaspoon
  • Cumin powder – 1 teaspoon
  • Black pepper – ¼ teaspoon
  • Salt – to taste
  • Bell pepper – 1 cup chopped
  • Fresh cilantro – 2 tablespoons chopped

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and sauté until soft and glossy.
  3. Stir in garlic and chipotle chili until aromatic.
  4. Add crumbled tofu and cook for 5 minutes, stirring gently.
  5. Sprinkle chili powder, paprika, cumin, salt, and black pepper.
  6. Add bell pepper, black beans, and kidney beans.
  7. Pour in tomato puree and vegetable broth.
  8. Stir well and bring to a gentle simmer.
  9. Cook uncovered for 25 minutes, stirring occasionally.
