Ingredients
  

  • Chickpea spaghetti: 300 g
  • Olive oil: 1½ tablespoons
  • Garlic minced: 3 cloves
  • Onion finely chopped: ½ cup
  • Cherry tomatoes halved: 1 cup
  • Spinach leaves: 2 cups
  • Tomato paste: 1 tablespoon
  • Italian seasoning: 1 teaspoon
  • Chili flakes: ¼ teaspoon
  • Salt: 1 teaspoon
  • Black pepper: ½ teaspoon
  • Pasta cooking water: ½ cup as needed
  • Fresh basil or parsley chopped: 2 tablespoons

Method
 

  1. Cook chickpea spaghetti in salted water until al dente, then reserve ½ cup cooking water and drain.
  2. Heat olive oil in a skillet and sauté onion until soft.
  3. Add garlic and cook briefly until aromatic.
  4. Stir in tomato paste, tomatoes, seasoning, chili flakes, salt, and pepper.
  5. Add spinach and cook until just wilted.
  6. Add cooked spaghetti to the skillet and toss gently.
  7. Splash reserved water gradually until sauce coats evenly.
  8. Finish with fresh herbs and serve warm.
