Ingredients
  

  • 2 plant-based chicken breasts about 200g
  • 1 tbsp olive oil
  • 1 tbsp garlic minced
  • ½ cup bell peppers sliced
  • ½ cup zucchini sliced
  • ½ cup cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp lemon juice
  • 2 tbsp basil chopped

Method
 

  1. Make the glaze.
  2. Mix balsamic vinegar, soy sauce, maple syrup, oregano, salt, and pepper.
  3. Cook the veggies.
  4. Sauté bell peppers, zucchini, and tomatoes in olive oil for 3 minutes.
  5. Add the vegan chicken.
  6. Place plant-based chicken breasts in the pan and cook 4–5 minutes each side.
  7. Glaze.
  8. Pour the balsamic mixture over everything and let it thicken.
  9. Brighten.
  10. Add lemon juice and toss gently.
  11. Finish.
  12. Garnish with basil and serve warm.
