Main Ingredients
  • Vegan beef crumbles – 2 cups
  • Sweet potato – 2 cups cubed
  • Onion – 1 medium chopped
  • Carrot – 1 medium sliced
  • Celery – 2 stalks chopped
  • Garlic – 1 tbsp minced
  • Tomato – 1 medium diced
  • Vegetable broth – 3 cups
Seasoning & Flavor
  • Olive oil – 1 tbsp
  • Paprika – ½ tsp
  • Thyme – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp
  • Soy sauce – 1 tbsp
  • Lemon juice – 1 tbsp

Method
 

  1. Add vegan beef crumbles, sweet potato, onion, carrot, celery, and tomato to the crockpot.
  2. Pour in the vegetable broth.
  3. Mix in garlic, paprika, thyme, salt, and pepper.
  4. Add soy sauce and olive oil.
  5. Stir lightly to combine.
  6. Cook on LOW for 6 hours.
  7. Stir once halfway through.
  8. Add lemon juice before serving.
  9. Taste and adjust seasonings.
  10. Serve with rice, quinoa, or warm bread.
