Ingredients

Banana Bread:
  • 3 ripe bananas mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup non-dairy milk almond, oat, or your favorite alt
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
Cinnamon Streusel Topping:
  • 1/3 cup flour
  • 1/4 cup brown sugar
  • 1 1/2 tsp cinnamon
  • 3 tbsp vegan butter cold, cubed
  • Pinch of salt

Method

  1. Preheat oven to 350°F (175°C). Grease your loaf pan like you mean it.
  2. In a large bowl, mash bananas until they resemble your social battery—slightly mushy.
  3. Stir in oil, sugar, milk, and vanilla. Combine until smooth and dramatic.
  4. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  5. Add dry mix to the wet ingredients. Stir just until combined—no overmixing, we’re not angry.
  6. Pour batter into the prepared pan and smooth the top like your best contour.
  7. In a small bowl, mix streusel ingredients with a fork or fingers until crumbly and irresistible.
  8. Sprinkle streusel evenly over the batter like you’re seasoning your ex’s karma.
  9. Bake for 55 minutes, or until a toothpick comes out mostly clean.
  10. Cool in the pan for 10 minutes, then remove and cool completely.
  11. Slice, serve, and pretend it’s the first thing you’ve eaten all day (we won’t judge).

  • A pinch of nutmeg in the streusel = chef’s kiss.
  • Swap half the flour for whole wheat if you’re feeling “responsible.”
