Ingredients
  

  • 2 plant-based chicken breasts about 200g
  • 1 tbsp olive oil
  • 1 tbsp garlic minced
  • 2 cups fresh spinach chopped
  • ½ cup coconut cream or cashew cream
  • 2 tbsp nutritional yeast
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp lemon juice

Method
 

  1. Cook the vegan chicken.
  2. Heat 1 tbsp olive oil and cook plant-based chicken breasts until golden.
  3. Add garlic.
  4. Add 1 tbsp minced garlic and sauté for 30 seconds.
  5. Add spinach.
  6. Stir in 2 cups chopped spinach until wilted.
  7. Make it creamy.
  8. Pour in coconut cream or cashew cream and stir gently.
  9. Season.
  10. Add nutritional yeast, oregano, salt, and pepper.
  11. Finish.
  12. Add 1 tbsp lemon juice and simmer until thick and glossy.
  13. Serve.
  14. Plate the creamy spinach mixture with the vegan chicken breasts.
