Ingredients
  

  • 1 medium cauliflower head cut into florets
  • ¾ cup panko breadcrumbs
  • ½ cup vegan parmesan finely grated
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 3 tbsp unsweetened plant milk
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In one bowl, whisk flour, plant milk, garlic powder, paprika, salt, and pepper until smooth.
  3. In another bowl, mix panko breadcrumbs, vegan parmesan, and nutritional yeast.
  4. Dip each cauliflower floret in batter, then coat with breadcrumb mixture.
  5. Arrange florets on the baking sheet, drizzle lightly with olive oil.
  6. Bake 25 minutes, flipping halfway, until golden and crisp.
  7. Garnish with parsley before serving.
