Ingredients
  

  • Pasta spaghetti or fettuccine: 300 g
  • Plant-based Greek-style yogurt: 1 cup 240 g
  • Olive oil: 1½ tablespoons
  • Garlic minced: 3 cloves
  • Onion finely chopped: ½ cup
  • Smoked tofu or vegan bacon bits: 150 g
  • Nutritional yeast: 3 tablespoons
  • Lemon juice: 1 tablespoon
  • Black pepper: ¾ teaspoon
  • Salt: 1 teaspoon
  • Turmeric powder: ⅛ teaspoon
  • Pasta cooking water: ¾ cup as needed
  • Fresh parsley chopped: 2 tablespoons

Method
 

  1. Cook pasta in salted water until al dente, then reserve cooking water and drain.
  2. Heat olive oil in a skillet and sauté onion until soft.
  3. Add garlic and smoked tofu, cooking three minutes until aromatic.
  4. Whisk Greek-style yogurt, nutritional yeast, lemon juice, turmeric, salt, and pepper in a bowl.
  5. Reduce heat and add cooked pasta to skillet.
  6. Pour yogurt mixture gently over pasta, stirring constantly.
  7. Add reserved water gradually until sauce turns creamy, not thick.
  8. Remove from heat and finish with parsley.
