Ingredients
  

  • 2 ripe bananas mashed
  • ¼ cup vegan honey or maple syrup
  • 2 tbsp melted coconut oil
  • ½ cup plant milk
  • 1 ¼ cups all-purpose or oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • Optional: 2 tbsp chopped nuts or vegan chocolate chips

Method
 

  1. Mash bananas.
  2. Mash 2 ripe bananas until smooth and lump-free.
  3. Mix wet ingredients.
  4. Add vegan honey, melted coconut oil, and plant milk.
  5. Add dry ingredients.
  6. Stir in flour, baking powder, baking soda, cinnamon, and salt.
  7. Combine.
  8. Mix until the batter is smooth; add nuts if desired.
  9. Fill the pan.
  10. Pour batter into a lined loaf pan and smooth the top.
  11. Bake.
  12. Bake at 175°C for 40 minutes or until golden and firm.
  13. Cool and slice.
  14. Allow it to rest before slicing for clean, soft pieces.
