  • Agave syrup – 3 tablespoons
  • Dijon mustard – 1 tablespoon
  • Soy sauce – 1 tablespoon
  • Lemon juice – 1 tablespoon
  • Garlic powder – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Salt – to taste
  • Fresh thyme – 1 teaspoon chopped

Method
 

  1. Preheat oven to 190°C and line a baking tray with parchment paper.
  2. Place plant-based salmon on the tray and brush lightly with olive oil.
  3. Whisk agave syrup, mustard, soy sauce, lemon juice, garlic powder, pepper, and salt in a bowl.
  4. Brush glaze generously over each fillet.
  5. Bake for 15 minutes, then brush with remaining glaze.
  6. Return to oven and bake 5 minutes until glossy and caramelized.
