Ingredients
  

  • 2 plant-based chicken breasts about 200g total
  • 1 tbsp olive oil
  • 1 tbsp garlic minced
  • 2 tbsp lemon juice
  • ½ tsp lemon zest
  • ½ tsp chili flakes optional
  • ½ tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp parsley chopped

Method
 

  1. Prep the marinade.
  2. Mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Coat the plant-based chicken.
  4. Add the vegan chicken breasts and rub them with the marinade.
  5. Heat the pan.
  6. Warm the pan on medium heat.
  7. Cook.
  8. Place vegan chicken breasts in the pan and cook 4–5 minutes each side.
  9. Add brightness.
  10. Splash extra lemon juice over the top and sprinkle chili flakes if desired.
  11. Finish.
  12. Garnish with parsley and serve hot.
