Ingredients
  

  • Red lentils – 1 cup
  • Water or vegetable broth – 3 cups
  • Onion – 1 medium chopped
  • Garlic – 3 cloves minced
  • Ginger – 1 teaspoon grated
  • Tomato – 1 large chopped
  • Coconut milk – 1/2 cup
  • Olive oil – 1 tablespoon
  • Curry powder – 1 tablespoon
  • Turmeric – 1/2 teaspoon
  • Cumin – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Fresh cilantro – 2 tablespoons chopped

Method
 

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger, then sauté until fragrant.
  3. Stir in chopped tomato and cook until softened.
  4. Add curry powder, turmeric, and cumin, then mix well.
  5. Add lentils and water or broth, then bring to a boil.
