Ingredients
  

Lentils
  • Brown lentils – 1 cup uncooked
  • Water – 3 cups
  • Salt – ½ tsp
Veggies
  • Cucumber – ½ cup diced
  • Cherry tomatoes – 1 cup halved
  • Red onion – ¼ cup finely chopped
  • Bell pepper – ½ cup chopped
  • Fresh parsley – 2 tbsp chopped
Dressing
  • Olive oil – 2 tbsp
  • Lemon juice – 2 tbsp
  • Garlic – 1 tsp minced
  • Black pepper – ¼ tsp
  • Oregano – ½ tsp

Method
 

  1. Rinse lentils well.
  2. Add lentils, water, and salt to a saucepan.
  3. Cook 20 minutes until tender.
  4. Drain and cool.
  5. Add tomatoes, cucumber, onion, and bell pepper.
  6. Add parsley.
  7. Mix olive oil, lemon juice, garlic, oregano, and pepper.
  8. Pour dressing over salad.
  9. Toss well.
  10. Chill or serve fresh.
