Ingredients
  

For the Curry
  • Red lentils – 1 cup rinsed
  • Onion – ½ cup chopped
  • Tomato – ½ cup chopped
  • Garlic – 1 tbsp minced
  • Ginger – 1 tsp grated
  • Coconut milk – ¾ cup
  • Water – 2 cups
Spices
  • Turmeric – ½ tsp
  • Cumin – ½ tsp
  • Curry powder – 1 tsp
  • Chili powder – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
Garnish
  • Coriander – 1 tbsp chopped
  • Lemon wedge – 1

Method
 

  1. Heat the pot on medium and sauté onion for one minute.
  2. Add garlic and ginger, and cook until aromatic.
  3. Add tomatoes and let them soften.
  4. Stir in turmeric, cumin, curry powder, chili, salt, and pepper.
  5. Add lentils and mix to coat them with spices.
  6. Pour water and simmer for 15 minutes.
  7. Add coconut milk and cook until creamy.
  8. Adjust thickness with more water if needed.
  9. Garnish with coriander and lemon.
  10. Serve warm with rice or flatbread.
