  • Ginger – 1 teaspoon grated
Peanut Sauce
  • Peanut butter unsweetened – 3 tablespoons
  • Soy sauce – 2 tablespoons

  • Sriracha – 1 teaspoon
  • Water – 3–4 tablespoons

Method
 

  1. Cook rice noodles according to package instructions, then drain and set aside.

  3. Heat olive oil in a pan over medium-high heat.
  4. Add garlic and ginger, then sauté for 30 seconds.

  6. Add broccoli, bell pepper, and carrot, then stir-fry for 3–4 minutes.
  7. Add cooked noodles and peanut sauce, tossing until evenly coated and glossy.
