Ingredients
  

  • 2 plant-based chicken breasts about 200g
  • 1 tbsp olive oil
  • 1 tbsp garlic minced
  • 1 tbsp chipotle sauce or chipotle paste
  • 1 tsp smoked paprika
  • ½ tsp chili flakes
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp lime juice
  • 2 tbsp coriander chopped

Method
 

  1. Make the marinade.
  2. Mix chipotle sauce, garlic, smoked paprika, chili flakes, salt, pepper, and lime juice.
  3. Coat the vegan chicken.
  4. Cover plant-based chicken breasts in the spicy mixture.
  5. Heat the pan.
  6. Add olive oil over medium heat.
  7. Cook.
  8. Pan-sear vegan chicken for 4–5 minutes per side until golden and smoky.
  9. Add extra chipotle.
  10. Pour leftover marinade into the pan and let it thicken.
  11. Finish.
  12. Top with fresh coriander and serve hot.
