  • 1 can jackfruit or vegan chicken substitute shredded
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 2 medium carrots diced
  • 2 stalks celery chopped
  • 1 cup corn kernels fresh or frozen
  • 1 can diced tomatoes 14 oz
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp chili powder adjust to taste
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • Fresh cilantro lime wedges, and avocado for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onions, garlic, and bell pepper until soft and fragrant (5 minutes).
  3. Add carrots, celery, corn, and shredded jackfruit; stir to coat.
