Ingredients
  

  • cups cooked white beans
  • 2 cups chopped kale
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 tablespoon garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon smoked paprika
  • 3 cups vegetable broth
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley

Method
 

  1. Heat olive oil in a pot and sauté onion for 2 minutes.
  2. Add garlic and stir for 30 seconds.
  3. Mix cumin, pepper, salt, and smoked paprika.
  4. Add white beans and toss for 1 minute.
  5. Pour in vegetable broth and bring to a boil.
  6. Simmer for 12 minutes.
  7. Add kale and cook for 3 minutes until softened.
  8. Finish with lemon juice and fresh parsley.
