Ingredients
  

  • Cooked short-grain rice — 2 cups
  • Shiitake mushrooms sliced — 2 cups
  • Firm tofu cubed — 1 cup
  • Miso paste — 2 tbsp
  • Soy sauce — 2 tbsp
  • Mirin — 1 tbsp
  • Sesame oil — 1 tsp
  • Garlic minced — 2 cloves
  • Ginger grated — 1 tsp
  • Green onions — ¼ cup
  • Spinach — 2 cups
  • Vegetable broth — ½ cup
  • Nori strips — 2 tbsp

Method
 

  1. Heat sesame oil in skillet over medium heat.
  2. Add garlic, ginger, and mushrooms; cook 5 minutes.
  3. Add tofu cubes and cook 4 minutes.
  4. Mix miso paste, soy sauce, mirin, and vegetable broth in bowl.
  5. Pour sauce into skillet and stir gently.
  6. Add spinach and cook until wilted.
  7. Place warm rice into serving bowls.
  8. Spoon mushroom mixture over rice evenly.
  9. Garnish with green onions and nori strips.
