Ingredients
  

  • 1 cup raw almonds
  • 1 cup shredded unsweetened coconut
  • 1 cup Medjool dates pitted
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 1 –2 tbsp maple syrup optional, for extra sweetness
  • Pinch of salt

Method
 

  1. Process almonds and dates in a food processor until finely chopped and sticky.
  2. Add shredded coconut, almond butter, vanilla, maple syrup, and salt. Mix until combined.
  3. Roll mixture into 1-inch bite-sized balls using hands.
  4. Optional: Roll bites in extra shredded coconut for a prettier coating.
  5. Chill in refrigerator for 15–20 minutes before serving.
