Ingredients
  

  • Plant-based chicken mince: 250 g
  • Breadcrumbs vegan: ½ cup
  • Flaxseed powder: 1 tablespoon
  • Water: 2½ tablespoons
  • Olive oil: 1 tablespoon
  • Garlic minced: 2 cloves
  • Onion finely chopped: ¼ cup
  • Italian seasoning: 1 teaspoon
  • Black pepper: ¼ teaspoon
  • Salt: ½ teaspoon
  • Nutritional yeast: 2 tablespoons

Method
 

  1. Preheat oven to 190°C and line a baking tray with parchment paper.
  2. Mix flaxseed powder with water and rest five minutes until gel forms.
  3. Combine plant-based chicken mince, breadcrumbs, flax gel, garlic, onion, seasoning, salt, pepper, and nutritional yeast.
  4. Add olive oil and mix gently until evenly combined.
  5. Shape mixture into equal-sized meatballs, about one tablespoon each.
  6. Arrange on tray with space between each piece.
  7. Bake for 20 minutes, turning halfway for even browning.
  8. Remove once firm and lightly golden.
