Baked Sweet Potato and Black Beans Recipe

Ingredients
  

  • Sweet potato cubed: 2 medium (400 g)
  • Cooked black beans: 1½ cups 240 g
  • Olive oil: 1½ tablespoons
  • Ground cumin: 1 teaspoon
  • Smoked paprika: 1 teaspoon
  • Garlic powder: ½ teaspoon
  • Onion powder: ½ teaspoon
  • Salt: ¾ teaspoon
  • Black pepper: ¼ teaspoon
  • Lime juice: 1 tablespoon
  • Fresh coriander chopped: 2 tablespoons

Method
 

  1. Preheat oven to 200°C and line a baking tray with parchment paper.
  2. Toss sweet potato cubes with olive oil, cumin, paprika, garlic powder, salt, and pepper.
  3. Spread evenly and bake for 30 minutes, flipping halfway until tender and caramelized.
  4. Warm black beans in a bowl with onion powder and a pinch of salt.
  5. Combine baked sweet potato and beans gently.
  6. Finish with lime juice and fresh coriander before serving
