BBQ Pulled Pork Sliders Recipe

Vegan BBQ pulled pork sliders made with shredded jackfruit, smoky sauce, and creamy slaw tucked inside pillowy buns.

Ingredients
  

  • For the pulled jackfruit:
  • 2 cans young green jackfruit in brine 20 oz each, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 cup vegan barbecue sauce
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • For the slaw:
  • 2 cups shredded cabbage
  • ½ cup shredded carrots
  • ¼ cup vegan mayo
  • 1 tbsp apple cider vinegar
  • ½ tsp salt
  • For assembly:
  • 6 slider buns vegan

Method
 

  1. Heat skillet with olive oil and sauté onion and garlic until fragrant.
  2. Add jackfruit, break apart with spoon, and sprinkle with paprika and pepper.
  3. Pour barbecue sauce over jackfruit, stir, and simmer 15 minutes until shredded and saucy.
  4. In a bowl, toss cabbage, carrots, vegan mayo, vinegar, and salt until creamy.
  5. Toast slider buns lightly for texture.
  6. Pile saucy jackfruit onto buns, top with slaw, and serve warm.
