Ingredients
  

  • Vegan beef chunks: 2 cups
  • Red bell pepper: 1 large cut into squares
  • Zucchini: 1 medium sliced thick
  • Red onion: 1 large cut into wedges
  • Cherry tomatoes: 1 cup
  • Olive oil: 3 tbsp
  • Soy sauce: 2 tbsp
  • Lemon juice: 2 tbsp
  • Garlic: 3 cloves minced
  • Smoked paprika: 1 tsp
  • Black pepper: 1/2 tsp
  • Salt: 1/2 tsp

Method
 

  1. In bowl, whisk olive oil, soy sauce, lemon juice, garlic, paprika, salt, and pepper.
  2. Toss vegan beef and vegetables in marinade; chill 15 minutes.
  3. Thread beef, peppers, zucchini, onions, and tomatoes onto skewers.
  4. Preheat grill to medium-high.
  5. Grill skewers 12–15 minutes, turning occasionally and basting with extra marinade.
  6. Remove from grill; rest 2 minutes.
  7. Garnish with fresh herbs.
  8. Serve hot with lemon wedges.
