- 1 lb vegan ground beef substitute
- 1 cup diced onions
- 2 cloves garlic minced
- 1 cup vegan shredded cheese
- 1 cup salsa choose your heat
- 1 can black beans drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 packet taco seasoning vegan
- 8 corn tortillas cut into strips
- 1 tbsp olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Sauté onions and garlic in olive oil until translucent.
Add vegan beef, taco seasoning, salt, and pepper; cook 5-7 minutes.
Mix in black beans, corn, and half the salsa.
Layer tortillas, beef mixture, cheese, and remaining salsa in casserole dish.
Repeat layers until ingredients are used, topping with cheese.
Bake covered for 20 minutes, uncover and bake 10 more.
