Ingredients
  

  • 1 lb vegan ground beef substitute
  • 1 cup diced onions
  • 2 cloves garlic minced
  • 1 cup vegan shredded cheese
  • 1 cup salsa choose your heat
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 packet taco seasoning vegan
  • 8 corn tortillas cut into strips
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté onions and garlic in olive oil until translucent.
  • Add vegan beef, taco seasoning, salt, and pepper; cook 5-7 minutes.
  • Mix in black beans, corn, and half the salsa.
  • Layer tortillas, beef mixture, cheese, and remaining salsa in casserole dish.
  • Repeat layers until ingredients are used, topping with cheese.
  • Bake covered for 20 minutes, uncover and bake 10 more.
