Broccoli and Cheddar Breakfast Casserole Recipe

A rich, comforting vegan breakfast casserole made with fresh broccoli, gooey dairy-free cheddar, and a fluffy chickpea “egg” mix — wholesome and irresistible.

Ingredients
  

  • Broccoli florets chopped – 3 cups
  • Olive oil – 1 tbsp
  • Onion chopped – 1 medium
  • Garlic minced – 2 cloves
  • Vegan cheddar cheese shredded – 1 cup
  • Chickpea flour – ¾ cup
  • Unsweetened almond milk – 1½ cups
  • Nutritional yeast – 2 tbsp
  • Black salt kala namak – ¼ tsp
  • Turmeric – ¼ tsp
  • Pepper – ¼ tsp
  • Salt – to taste
  • Paprika – ½ tsp

Method
 

  1. Preheat oven to 190°C (375°F). Grease the baking dish like your life depends on breakfast.
  2. Steam or blanch broccoli florets for 3 minutes until slightly tender — no mushy greens allowed.
  3. In a pan, heat olive oil and sauté onion and garlic until fragrant and lightly golden.
  4. In a bowl, whisk chickpea flour, almond milk, nutritional yeast, black salt, turmeric, paprika, pepper, and salt until smooth.
  5. Add sautéed onions, garlic, and broccoli to the batter. Stir until evenly coated in cheesy ambition.
  6. Fold in half the vegan cheddar and mix well.
  7. Pour the mixture into the baking dish, spreading it evenly.
  8. Sprinkle the remaining cheddar on top because you’re not here for minimalism.
  9. Bake for 40 minutes until golden and slightly crisp at the edges.
  10. Let it cool for 10 minutes, slice, and serve with your best “I totally planned this” face.
