Ingredients
  

  • Salmon fillets: 4 6 oz each
  • Olive oil: 2 tbsp
  • Cajun seasoning: 2 tbsp
  • Sea salt: ½ tsp
  • Black pepper: ½ tsp
  • Mango diced: 1 cup
  • Red onion diced: ¼ cup
  • Red bell pepper diced: ½ cup
  • Fresh cilantro chopped: 2 tbsp
  • Lime juice: 2 tbsp

Method
 

  1. Preheat oven to 400°F (200°C) or heat grill pan.
  2. Brush salmon fillets with olive oil.
  3. Rub Cajun seasoning, salt, and pepper evenly on salmon.
  4. Bake or grill salmon 12–15 minutes until cooked through.
  5. In bowl, mix mango, onion, bell pepper, cilantro, and lime juice.
  6. Top salmon with fresh salsa before serving.
