Preheat grill to medium-high or oven to 400°F (200°C).
In a large bowl, combine potatoes, corn, bell pepper, zucchini, vegan shrimp, and sausage.
Drizzle olive oil and sprinkle Cajun seasoning, paprika, garlic powder, salt, and pepper; toss until coated.
Lay out foil sheets; divide mixture evenly into four portions.
Fold foil into tightly sealed packets.
Place packets on grill or baking sheet; cook for 25 minutes until vegetables are tender.
Carefully open packets, squeeze lemon juice, and garnish with parsley.
Serve hot—preferably with extra sass and maybe cornbread.
