Method
- Preheat oven to 400°F and line baking tray.
- Toss sweet potato cubes with 1 tablespoon olive oil, salt, pepper, and half the spices.
- Place sweet potatoes on tray and roast for 15 minutes.
- Season chicken with remaining oil, garlic powder, paprika, herbs, salt, and pepper.
- Add chicken to tray with sweet potatoes.
- Roast for another 10–12 minutes until chicken cooks through.
- Remove from oven and let rest briefly before serving.
