Chicken and Sweet Potato Healthy Recipe

Ingredients
  

  • Chicken breast – 2 pieces about 6 oz each
  • Sweet potatoes – 2 medium cubed
  • Olive oil – 2 tablespoons
  • Garlic powder – 1 teaspoon
  • Paprika – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Dried herbs thyme or rosemary – 1/2 teaspoon

Method
 

  1. Preheat oven to 400°F and line baking tray.
  2. Toss sweet potato cubes with 1 tablespoon olive oil, salt, pepper, and half the spices.
  3. Place sweet potatoes on tray and roast for 15 minutes.
  4. Season chicken with remaining oil, garlic powder, paprika, herbs, salt, and pepper.
  5. Add chicken to tray with sweet potatoes.
  6. Roast for another 10–12 minutes until chicken cooks through.
  7. Remove from oven and let rest briefly before serving.
