  • 1 lb vegan chicken pieces
  • 1 cup pitted olives green or black
  • 1 can 14 oz crushed tomatoes
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1/2 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in skillet over medium heat.
  • Sauté onion, garlic, and bell pepper until softened.
  • Add vegan chicken pieces; brown slightly.
  • Stir in crushed tomatoes, olives, broth, oregano, and basil.
  • Simmer uncovered for 35 minutes, stirring occasionally.
  • Season with salt and pepper.
  • Garnish with fresh parsley before serving.
