A vegan take on classic chicken fajitas, loaded with colorful bell peppers and bold, smoky seasoning.

Ingredients
  

  • 1 lb vegan chicken strips
  • 3 bell peppers mixed colors, sliced
  • 1 medium onion sliced
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Tortillas for serving

Instructions
 

  • Heat olive oil in skillet over medium heat.
  • Add sliced onions and bell peppers, sauté 5 minutes until soft.
  • Toss vegan strips with spices and add to skillet.
  • Cook for 7-8 minutes, stirring occasionally.
  • Warm tortillas and serve fajita filling inside.
