A vegan take on classic chicken fajitas, loaded with colorful bell peppers and bold, smoky seasoning.

- 1 lb vegan chicken strips
- 3 bell peppers mixed colors, sliced
- 1 medium onion sliced
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Tortillas for serving
Heat olive oil in skillet over medium heat.
Add sliced onions and bell peppers, sauté 5 minutes until soft.
Toss vegan strips with spices and add to skillet.
Cook for 7-8 minutes, stirring occasionally.
Warm tortillas and serve fajita filling inside.
