Ingredients
  

For the vegan “chicken” fajitas:
  • 1 lb vegan chicken strips or seitan
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 –6 flour tortillas
Optional toppings:
  • Guacamole
  • Vegan sour cream
  • Fresh cilantro
  • Lime wedges

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add vegan “chicken” strips and cook until lightly browned, 5–7 minutes.
  3. Stir in sliced peppers, onions, and garlic, cooking until tender and slightly charred, about 8 minutes.
  4. Sprinkle smoked paprika, cumin, chili powder, salt, and pepper; stir to coat evenly.
  5. Warm tortillas in a separate pan or microwave.
  6. Assemble fajitas by layering vegan “chicken” and vegetables on tortillas.
  7. Garnish with guacamole, vegan sour cream, cilantro, and a squeeze of lime.
