Chickpea Taco Food Recipe

Ingredients
  

  • Chickpeas drained — 2 cups
  • Olive oil — 1 tbsp
  • Taco seasoning — 1 tbsp
  • Garlic powder — 1 tsp
  • Lime juice — 1 tbsp
  • Corn tortillas — 8 small
  • Lettuce shredded — 2 cups
  • Cherry tomatoes chopped — 1 cup
  • Avocado sliced — 1 cup
  • Red onion diced — ½ cup
  • Fresh cilantro — 2 tbsp

Method
 

  1. Heat olive oil in skillet over medium heat.
  2. Add chickpeas and cook 5 minutes, stirring occasionally.
  3. Stir in taco seasoning and garlic powder.
  4. Cook chickpeas another 3 minutes.
  5. Add lime juice and mix well.
  6. Warm tortillas in skillet briefly.
  7. Spoon chickpea filling into tortillas.
  8. Add lettuce, tomatoes, avocado, and onion.
  9. Sprinkle cilantro before serving.
