Method
- Preheat oven to 180°C and lightly grease loaf pan.
- Mix flaxseed with water, resting 5 minutes until thick.
- Mash black beans until mostly smooth, leaving texture.
- Add oats, onion, bell pepper, garlic, flax mixture, oil, tomato paste, soy sauce, chipotle powder, paprika, cumin, and pepper.
- Mix gently until cohesive and evenly seasoned.
- Press mixture firmly into loaf pan.
- Smooth top evenly with spatula.
- Bake for 40 minutes until edges appear set.
- Rest loaf 5 minutes, then slice cleanly.
