Ingredients
  

  • ½ cup coconut oil softened.
  • ½ cup brown sugar.
  • ¼ cup cane sugar.
  • 2 tbsp plant milk.
  • 1 tsp vanilla extract.
  • 1 ½ cups all-purpose flour.
  • ½ tsp baking soda.
  • ½ tsp baking powder.
  • ½ tsp salt.
  • ¾ cup vegan chocolate chips.
  • ½ cup chopped walnuts.

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Cream coconut oil with brown sugar and cane sugar.
  3. Mix in plant milk and vanilla until smooth.
  4. In separate bowl, whisk flour, baking soda, baking powder, and salt.
  5. Fold dry ingredients into wet mixture until dough forms.
  6. Stir in chocolate chips and walnuts.
  7. Scoop dough onto baking sheet.
  8. Bake 12 minutes or until golden at edges.
  9. Cool on rack before devouring—or don’t, your choice.
