In a separate bowl, whisk flour, baking soda, and salt until thoroughly combined.
Gradually add dry mixture to wet ingredients. Stir until just combined—don’t beat it like it owes you rent.
Fold in shredded coconut like you mean it.
Pour batter into loaf pan and smooth the top gently, like applying under-eye cream.
Sprinkle extra coconut and lime zest on top if you're feeling fancy.
Bake for 55 minutes, or until a toothpick comes out clean-ish but not soggy.
Cool in pan for 10 minutes, then remove and let it cool completely on a wire rack.
Slice, serve, and pretend you're in Bali.
