Ingredients
  

Banana Bread:

  • 3 medium ripe bananas mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup organic cane sugar

  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup non-dairy milk coconut milk is fabulous here
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt

Optional Topping:

  • 1 tbsp shredded coconut
  • A dash of lime zest for flair

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment like the domestic goddess you are.
  • In a large bowl, mash bananas until beautifully broken.
  • Stir in coconut oil, sugar, lime juice, zest, milk, and vanilla.
  • In a separate bowl, whisk flour, baking soda, and salt until thoroughly combined.
  • Gradually add dry mixture to wet ingredients. Stir until just combined—don’t beat it like it owes you rent.
  • Fold in shredded coconut like you mean it.
  • Pour batter into loaf pan and smooth the top gently, like applying under-eye cream.
  • Sprinkle extra coconut and lime zest on top if you're feeling fancy.
  • Bake for 55 minutes, or until a toothpick comes out clean-ish but not soggy.
  • Cool in pan for 10 minutes, then remove and let it cool completely on a wire rack.
  • Slice, serve, and pretend you're in Bali.
