Ingredients
  

  • Bread slices – 4 thick slices
  • Eggs – 2 large
  • Coconut milk – 1/3 cup
  • Cinnamon – 1/2 teaspoon
  • Vanilla extract – 1/2 teaspoon
  • Maple syrup – 1 tablespoon optional
  • Oil or butter – 1 tablespoon

Method
 

  1. Whisk eggs, coconut milk, cinnamon, vanilla extract, and maple syrup in a bowl.
  2. Heat skillet over medium heat and add oil or butter.
  3. Dip each bread slice into mixture, coating both sides evenly.
  4. Place slices onto heated skillet.
  5. Cook for 2–3 minutes per side until golden brown.
  6. Remove and serve warm.
