  • Coconut oil melted – 3 tablespoons
  • Maple syrup – ⅓ cup
  • Unsweetened almond milk – ¼ cup
  • Vanilla extract – 1 teaspoon
  • Baking powder – ½ teaspoon
  • Salt – a pinch

Method
 

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Add coconut, protein powder, almond flour, baking powder, and salt to a bowl.
  3. Mix coconut oil, maple syrup, almond milk, and vanilla extract separately.
  4. Combine wet mixture with dry ingredients until dough forms.
  5. Scoop dough, shape into cookies, and place on tray.
  6. Bake for 12–15 minutes until edges set lightly.
  7. Cool before serving for better texture.
