Ingredients
  

  • Plant-based ground turkey – 300 g
  • Breadcrumbs – ½ cup
  • Unsweetened almond milk – ¼ cup
  • Flaxseed powder – 1 tablespoon
  • Water – 2½ tablespoons
  • Onion – ¼ cup finely chopped
  • Garlic – 2 cloves minced
  • Black pepper – ¼ teaspoon
  • Salt – to taste
  • Cranberry Sauce
Cranberries (fresh or frozen) – 1 cup
  • Maple syrup – 2 tablespoons
  • Orange juice – ¼ cup
  • Apple cider vinegar – 1 teaspoon

Method
 

  1. Mix flaxseed powder with water and rest for 5 minutes.
  2. Combine plant-based turkey, breadcrumbs, almond milk, flax mixture, onion, garlic, salt, and pepper.
  3. Shape mixture into even meatballs.
  4. Preheat oven to 190°C and line a tray.
  5. Bake meatballs for 20 minutes, flipping once.
  6. Simmer cranberries, maple syrup, orange juice, and vinegar for 10 minutes until thick.
  7. Toss baked meatballs in sauce and serve warm.
