  • 1 cup lentils (rinsed)
  • 1 tbsp oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp ginger (minced)
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1 can coconut milk
  • 2 cups vegetable broth
  • Salt to taste

Method
 

  1. Heat oil in a pot over medium heat. Add onion, garlic, and ginger, and sauté until soft and fragrant.

  3. Add lentils, coconut milk, and vegetable broth. Stir well to combine ingredients evenly.
  4. Simmer for 20 to 25 minutes until lentils are tender and curry thickens to a creamy consistency.
  5. Season with salt and adjust texture with extra broth if needed before serving.

Notes

Cook longer for thicker texture or add liquid for thinner consistency. Freezing works well but may slightly change texture. Stir gently to avoid breaking lentils. Customize spices and add vegetables. Store in airtight container in refrigerator up to four days.
