Creamy Mushroom Chicken Recipe

Ingredients
  

For the Vegan Chicken
  • Vegan chicken fillets – 250 g
  • Olive oil – 1 tbsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
For the Creamy Mushroom Sauce
  • Mushrooms – 1 cup sliced
  • Onion – ¼ cup chopped
  • Garlic – 1 tbsp minced
  • Dairy-free cream or coconut milk – ¾ cup
  • Vegetable broth – ¼ cup
  • Italian herbs – ½ tsp
  • Nutritional yeast – 1 tbsp
  • Lemon juice – 1 tsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
For Serving
  • Rice mashed potatoes, or pasta – 1 cup
  • Parsley – 1 tbsp chopped

Method
 

  1. Heat olive oil in a pan.
  2. Season vegan chicken with salt and pepper.
  3. Sear each fillet for 3–4 minutes per side; remove.
  4. Add onion and garlic, sauté until fragrant.
  5. Add mushrooms and cook until browned.
  6. Pour dairy-free cream and vegetable broth.
  7. Add herbs, nutritional yeast, lemon, salt, and pepper.
  8. Simmer for 3 minutes until creamy.
  9. Return vegan chicken to the pan.
  10. Coat well and serve with parsley.
