Method
- Heat oil in a pan on medium heat.
- Sear vegan pork chops for 4 minutes on each side.
- Remove chops and set aside.
- Add mushrooms to the pan and sauté 3 minutes.
- Pour in vegetable broth and stir.
- Add coconut cream, garlic powder, onion powder, thyme, salt, and pepper.
- Whisk until smooth and creamy.
- Return chops to the pan.
- Simmer 5 minutes until sauce thickens.
- Garnish with parsley and serve warm.
