Ingredients
  

  • Plant-based ground turkey — 12 oz
  • Mushrooms sliced — 3 cups
  • Onion diced — 1 cup
  • Garlic minced — 2 cloves
  • Olive oil — 1 tbsp
  • Unsweetened coconut milk — 1 cup
  • Vegetable broth — ½ cup
  • Nutritional yeast — 2 tbsp
  • Thyme — 1 tsp
  • Black pepper — ¼ tsp
  • Salt — ½ tsp
  • Spinach — 2 cups
  • Cooked pasta or rice — 2 cups

Method
 

  1. Heat olive oil in skillet over medium heat.
  2. Add onion and garlic; cook 3 minutes.
  3. Add mushrooms and cook 5 minutes until softened.
  4. Add 12 oz plant-based ground turkey and cook 5 minutes.
  5. Pour coconut milk and vegetable broth into skillet.
  6. Stir in nutritional yeast, thyme, salt, and black pepper.
  7. Simmer mixture 5 minutes until sauce thickens.
  8. Add spinach and cook until wilted.
  9. Serve creamy mixture over cooked pasta or rice.
