Ingredients
  

  • 1 cup wild rice rinsed
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 3 carrots diced
  • 3 stalks celery diced
  • 6 cups vegetable broth
  • 1 cup coconut milk or cashew cream
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in pot over medium heat.
  • Sauté onion, garlic, mushrooms, carrots, and celery until tender.
  • Add wild rice, broth, thyme, salt, and pepper.
  • Bring to boil, then simmer covered for 40 minutes until rice is tender.
  • Stir in coconut milk or cashew cream and heat through.
  • Garnish with parsley before serving.
