Ingredients
  

  • 1 cup wild rice rinsed
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 3 carrots diced
  • 3 stalks celery diced
  • 6 cups vegetable broth
  • 1 cup coconut milk or cashew cream
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in pot over medium heat.
  2. Sauté onion, garlic, mushrooms, carrots, and celery until tender.
  3. Add wild rice, broth, thyme, salt, and pepper.
  4. Bring to boil, then simmer covered for 40 minutes until rice is tender.
  5. Stir in coconut milk or cashew cream and heat through.
  6. Garnish with parsley before serving.
