Ingredients
  

  • Salmon fillets: 4 6 oz each
  • Olive oil: 2 tbsp
  • Garlic cloves minced: 3
  • Vegan parmesan cheese: ½ cup
  • Panko breadcrumbs: ½ cup
  • Fresh parsley chopped: 2 tbsp
  • Lemon zest: 1 tsp
  • Salt: ½ tsp
  • Black pepper: ¼ tsp

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Mix parmesan, panko, garlic, parsley, lemon zest, salt, and pepper in bowl.
  3. Brush salmon fillets with olive oil.
  4. Press parmesan mixture onto salmon tops to coat.
  5. Bake 12–15 minutes until salmon flakes easily and crust turns golden brown.
  6. Serve warm with lemon wedges.
