Ingredients
  

  • 1 lb Brussels sprouts trimmed, halved
  • 2 tbsp olive oil
  • 3 garlic cloves minced

  • ½ tsp black pepper
  • ¼ cup vegan parmesan cheese grated
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley optional garnish

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment.
  2. In mixing bowl, toss Brussels sprouts with olive oil, garlic, salt, and black pepper.
  3. Spread sprouts evenly on baking sheet, cut sides down.
  4. Roast 20–25 minutes until crispy and golden brown.
  5. Sprinkle vegan parmesan over hot sprouts.
  6. Drizzle with lemon juice for brightness.
  7. Garnish with parsley before serving.
