Ingredients
  

  • 1 cup cooked pasta small shapes
  • cups chickpeas cooked
  • 1 cup cucumber chopped
  • 1 cup tomatoes chopped
  • ½ cup red onion sliced
  • ¼ cup olives sliced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Add pasta, chickpeas, cucumber, tomatoes, onion, and olives to a mixing bowl.
  2. Mix olive oil, lemon juice, oregano, pepper, and salt in a separate bowl.
  3. Pour dressing over the salad ingredients.
  4. Toss until everything is coated evenly.
  5. Garnish with fresh parsley and serve chilled.
