Ingredients
  

  • Rolled oats – 1½ cups
  • Vegan Greek-style yogurt – ½ cup
  • Almond flour – ¼ cup
  • Maple syrup – ¼ cup
  • Unsweetened almond milk – 2 tablespoons
  • Chia seeds – 1 tablespoon
  • Baking powder – ½ teaspoon
  • Cinnamon powder – ½ teaspoon
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch
  • Chopped dried cranberries – ¼ cup

Method
 

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Add oats, almond flour, baking powder, cinnamon, salt, and chia seeds to a bowl.
  3. Mix yogurt, maple syrup, almond milk, and vanilla extract separately.
  4. Combine wet mixture with dry ingredients until soft dough forms.
  5. Fold cranberries evenly through the mixture.
  6. Scoop dough, shape gently, and place on tray.
  7. Bake for 12–15 minutes until set.
  8. Cool slightly before serving.
