Method
 

  1. Whisk eggs, Greek yogurt, milk, cinnamon, and vanilla extract until smooth.
  2. Heat skillet over medium heat and add butter or oil.
  3. Dip each bread slice into mixture, coating both sides evenly.
  4. Place slices onto heated skillet.
  5. Cook for 2–3 minutes per side until golden and slightly crisp.
  6. Remove and serve warm.
